Miso Soup – Tonjiru

This is a kind of miso soup called “tonjiru”, which contains shredded pork and many vegetables. There are many types of tonjiru and all of them contains pork. If there was no pork, it is not a tonjiru. You can change variety of vegetables with your preferences.

Ingredients
Dashi soup      1,000 ml
Pork         200g-300g
White radish      10㎝
Carrot         1pc
Konnyaku       300g (plant based gelatinous cake)
Burdock (gobo)     1pc
Green onion      1pc
Shiitake mushroom   3-4 pcs
Miso         120g

How to cook
1. Prepare dashi soup. Slice white radish and carrot with about 3mm thickness. See pictures. Slice konnyaku and shiitake mushrooms. Cut burdock into small pieces and soak in a water. Chop green onions.
2. Oil in a pan, cook white radish, carrots, burdock, and konnyaku. Add dashi soup and pork.
3. Cook for 2-3 hours. Remove bubbles. Add green onions and shiitake mushrooms.
4. Remove oils and more bubbles. Dissolve miso. Add more miso if needed.
5. Cook for another 15 minutes. This soup is good next day.

Slice white radish.
Slice carrots.
Cut burdock and soak in a water.
Slice konnyaku into the size 1cm x 2cm.
Cook vegetables in a pan.

   

                                      

Add dashi soup and pork. Cook for 2-3 hours. Remove bubbles and excess oils.
Dissolve miso.
Cook for another 15 mins.
