This is a kind of omelet that is often eaten on new year’s day, as a part of the “osechi”. However, “date-maki” is sold at supermarkets all year-round. This is very nutritious but very sweet.
The rolling mat used in this dish is called “oni-sudare”, slightly different from an ordinary mat. Every thread is triangular to give dents on the omelet. You can use an ordinary rolling mat if you did not have “oni-sudare”.
Ingredients (for 26cm x 26cm container)
White fish fillet 170g
Egg 8pcs
Sugar 100g
Mirin 25㏄
Salt 4g
How to cook
1. Smooth all the ingredients using blender or mixer.
2. Place oven sheet inside of the container. Pour the mixture.
3. Bake for 10 minutes at 200C, and then 15 minutes at 180C.
4. Place the omelet on the rolling mat (see picture).
5. Roll tightly.
6. Tie with rubber bands. Cool the omelet as it stands up.
