Kouglof is a cake that is baked in a Kougof container. If they are baked in a rectangular container, the cake is called a “pound cake”. There are many types of Kouglof and its origin is in Alsace, France. I use rice powder instead of wheat flour to make it gluten-free.
This recipe uses cinnamon apple. You will feel the existence of the apple in a soft sponge.
Ingredients
Cinnamon apple 200g
Butter 150g
Powder sugar 150g
Corn starch 35g
Egg 2pcs
Rice powder 100g
Almond powder 50g
Baking soda 3㏄
Butter for the container 50g
How to cook
1. Leave butter in a room temperature. Sift powder sugar and corn starch together. Sift rice powder, almond powder, and baking soda together. Spread butter inside of the container and store in the fridge.
2. Whisk the butter to make like cream.
3. Add powder sugar and corn starch. Mix well.
4. Add eggs and mix well.
5. Add rice powder, almond powder, and baking soda. Mix well.
6. Add cinnamon apple and mix.
7. Put the dough in the container.
8. Bake for 60 minutes at 160C of the oven.
9. Sprinkle powder sugar on top of the cake.
