“Chikuzen-ni” (Chicken & Vegetables)

This is a traditional Japanese dish called “chikuzen-ni”. “Chikuzen” is an old name of “Fukuoka” prefecture. This dish is from “chikuzen” area. It should contain chicken, lotus root, carrot, konjac, and burdock. Chicken can be breast or leg.

Ingredients
Chicken       250g
Burdock       100g
Lotus root      300g
Carrot        200g
Konjac        250g
Dashi soup      300㏄
Sugar        75㏄
Soya-bean sauce   65㏄
Sake        100㏄
Oil

How to cook
1. Scratch skin of burdock and cut randomly(see picture). Peel skins of lotus roots and cut randomly. Soak burdock and lotus roots in water. Tear off konjac into small pieces. Peel skin of carrot and cut randomly. Cut chicken into about 3cm.
2. Spread oil in a pan. Cook chicken, lotus roots, burdock, konjac, and carrot.
3. Add dashi soup, sake, and sugar when lotus roots become transparent. Cook for 10 minutes.
4. Add soya-bean sauce. Cook until most of the soup is gone. Mix once in a while.

Scratch skin of burdock using back side of the knife.
Cut burdock randomly.
Peel skin of lotus root and cut randomly.
Soak lotus root and burdock in water.
Tear off konjac into small pieces.

Spread oil in a pan. Cook chicken, burdock, lotus root, konjac, and carrot until lotus root become transparent.
Add dashi soup, sake, and sugar. Cook for 10mins. Add soya-bean sauce and cook until most of the soup is gone.
