Kimchi is a Korean pickles but very popular in Japan. Many types of kimchi are sold at supermarkets, from traditional flavor to mild, arranged for Japanese taste ones. When Kimchi are stir fried, its taste changes that they become less spicy. Cooked with pork is quite common in Japan but cannot find at Korean restaurants. So, it could be a Japanese dish! Pork should be sliced but can be any parts of pork. I recommend to use kimchi with traditional flavor with some days after the before best date. Those old kimchi are sour and this sourness gives better taste when cooked.
