Grated White Radish

Grate Japanese white radish is called “daikon oroshi”. This is made using a grater. There is a special grater for white radish and you can find them at supermarkets, department stores or even at 100 yen stores. Removing water needs some technique. You can easily adjust the water quantity of the grated radish if you used a rolling mat (maki-su).

Grated white radish can be eaten with tempura, “shirasu”, grilled fish, “ikura”, or even with a miso soup. Usually, grated white radish is served with soya-bean sauce.

How to cook
1. Peel skin of the radish and grate it using a grater.
2. Place grated radish on a rolling mat.
3. Squeeze gently with the rolling mat to remove some water. Continue to squeeze until the radish has your favorite water quantity.
