Marinated Burdock (Tataki Gobo)

Boiled burdock is marinated with ground sesame seeds. This dish is a part of “osechi” dish but you can have this as a salad.

Ingredients
Burdock        200g
Sesame seeds (ground) 45㏄
Sugar         30㏄
Soya-bean sauce    10㏄
Dashi soup       15㏄

How to cook
1. Wash burdock and peel skin with back of the knife.
2. Cut to 5cm length and the cut into 4-6 sticks.
3. Water, vinegar (15cc), and burdock in a pan. Boil for about 15 minutes, until the burdocks soften.
4. Drain and put burdocks in a plastic bag. Smash burdocks with thick stick.
5. Mix ground sesame seeds, sugar, soya-bean sauce, and dashi soup in a bowl. Marinate burdocks with the mixture. Serve after 30 minutes or more.

Drain. Put burdocks in a plastic bag. Smash burdocks with thick stick.
Mix ground sesame seeds, sugar, soya-bean sauce, and dashi soup in a bowl. Marinate burdocks. Leave for 30mins or more.
