Lotus Roots : Traditional

This is a traditional recipe that often is a part of “osechi”, a new year celebration dinner. We usually cut the edge of the lotus roots for decoration.

Ingredients
Lotus roots     400g
Dashi soup     500㏄
Sugar       23㏄
Mirin        23㏄
Soya-bean sauce  34㏄
Salt

How to cook
1. Peel skin of the lotus roots. Cut vertically and then slice with 1.5 – 2cm thickness. Remove edges of the lotus roots. You can skip this if you didn’t have time.
2. Boil lotus roots in boiling water with some vinegar. Boil for 4 minutes. Drain and sprinkle some salt.
3. Place lotus roots in a pan and pour dashi soup. Let it boils. Cover the pan with kitchen paper like Bounty. Cook for 10 minutes.
4. Add sugar and mirin. Cook for 5 minutes.
5. Add soya-bean sauce. Cook until most of the liquid is gone.

Boil water with some vinegar. Boil lotus roots for 4 minutes. Drain. Sprinkle some salt.
Boil lotus roots in a dashi soup. Cook for 10mins with the pan covered. Add sugar and mirin. Cook for 5mins.
Add soya-bean sauce.
Cook until most of the liquid is gone.
