Ponzu (Soya-bean Sauce with Citrus)

Ponzu is a kind of sauce that contains soya-bean sauce and “yuzu” juice. “Yuzu” is a citrus fruit that is very sour and has a nice smell. Ponzu is used when we eat “shabu-shabu”, boiled green vegetables, or pickles. You can easily find ponzu at supermarkets but very easy to make yourself. Fresh yuzu gives better flavor but you can also use bottled “yuzu” juice.

Ingredients
Yuzu juice         100㏄
Soya-bean sauce      150㏄
Mirin            10㏄
Konbu           10cm x 10cm
Katsuobushi (bonito flakes)  10g

How to cook
1. Heat soya-bean sauce, mirin, konbu, and katsuobushi in a pan.
2. Stop heating when it gets boil. Cover the pan. Take out konbu and katsuobushi after 15 minutes.
3. Squeeze yuzu to make a juice. Separate juice and seeds.
4. Mix 2. and yuzu juice. Store in a fridge. Use after 2 days.

Heat soya-bean sauce, mirin, konbu, and katsuobushi in a pan. Stop heating when it boils. Cover the pan.
Take out konbu and katsuobushi after 15 mins.
Prepare yuzu juice.
Mix soya-bean sauce and yuzu juice. Store in a fridge for 2 days before use.
