Dumplings – “Gyoza”

This dumpling is called “gyoza”. “Gyoza” is very popular dish in Japan and there are many recipes available. You can arrange this recipe by changing vegetables or meat, add other vegetables, or remove some of the ingredients. I recommend soya-bean sauce and vinegar to eat gyoza. If you prefer a spicy taste, add some Chinese chili oil called “ra-yu”.

I always prepare “gyoza” soup when I cook gyoza. If you want to cook soup, please separate 50g of the mixture and some wrapped uncooked “gyoza”.

Ingredients
Minced pork     500g
Cabbage      500g
Chinese chives   100g
Shiitake mushroom  4pcs
Salt        3g
Egg        1pc
Gyoza sheet    60 sheets
Sesame oil      15cc

How to cook
1. Chop cabbage, Chinese chives, and shiitake mushrooms. You can use food processor. Mix with salt and leave for 30 minutes.
2. Using cooking paper like Bounty or kitchen cloth, drain vegetables.
3. Add minced pork and egg. Mix well.
4. Wrap mixture with “gyoza” sheets.
5. Spread oil in a large pan and heat. Place wrapped gyoza and add about 100cc of water. Cover the pan and cook until all the water is gone.
6. Sprinkle sesame oil and cook until gyoza gets crispy.

Chop cabbage, Chinese chives, and shiitake mushrooms. Mix with salt and leave for 30 mins.
Drain vegetables using Bounty-like paper or thin cloth.
Add egg and minced pork. Mix well.
Place mixture on the gyoza sheet. Put water around the edge of the sheet.
Wrap the mixture. Make folds like picture.

                                            

  

Heat a large pan. Spread oil and place gyoza. Add 100cc of water and cover the pan.
Cook until all the water is gone. Sprinkle sesame oil and cook until gyoza gets crispy.
This gyoza sheet is made from rice powder.
