This is buttercream with green tea seasoning. You can arrange this buttercream using other seasonings. I make this cream for macarons but this cream is also good with toasts or scorns as well.
Ingredients
Butter 60g
Egg yolk 1pc (freeze egg white for macarons)
Sugar 28g
Water 15g
Green tea (powder) 2.5g
How to cook
1. Leave butter at room temperature. Cream the butter with beater.
2. Heat water and sugar in a pan. Make it 117C.
3. Beat egg yolk in a bowl at high speed. Add 117C of syrup. Keep beating and make the mixture whitish.
4. Mix with butter.
5. Dissolve green tea with about 3 cc of water. Mix with the cream.
6. To use for macarons, put in a pastry bag and store in a fridge.
