Spicy Squid Jerky

This is a Korean dish. You can eat as they are as a side dish or as snacks. I use them for Korean rolls as well. Squid jerky can be found at Korean or Japanese food shops, and they are called “saki ika” in Japanese.

Ingredients
Squid jerky (saki ika)          200g
Oil (no flavor)             15㏄
Garlic                 5㏄ (grated)
Mayonnaise              30㏄
Sesame                5㏄
<Dressing>
– Soya bean sauce           15㏄
– Sesame oil              15㏄
– Korean red peppers (dry)        15㏄
– Gochujang (Korean spicy miso paste)  25㏄
– Starch syrup             30㏄
– Mirin                30㏄ (sake 25g + sugar 5g)
– Sugar                5g

How to cook
1. Wash squid jerky thoroughly.
2. With low flame, cook garlic and oil in a pan. Stop heating after garlic started to smell.
3. Add dressings into a pan. Start cooking with low flame.
4. Add squid jerky and cook for a while.
5. Stop heating. Add mayonnaise and sesame. Mix well.
6. Store in a fridge.
