Udon is a kind of Japanese noodle, made from wheat flour. Gluten-free udon-type noodles are sold at supermarkets but none of them has the same taste as udon. Therefore, I recommend cooking this dish with ordinary udon.
This recipe is soup noodle. Udon can be eaten both hot and cold. Soup noodle is always hot. I used chicken but pork, beef, or ducks also OK. I did not use shiitake mushrooms this time but it is good to have.
Ingredients
Udon 2pcs (two servings)
Dashi soup 1,000㏄
Soya-bean sauce 45㏄
Salt 5㏄
Mirin 5㏄
Chicken 200g
Green onion 1pc
Green vegetables 100g
Egg 2pcs
How to cook
1. Prepare dashi soup. Boil green vegetables, squeeze to remove water, and cut into 5cm length. Cut chicken into small pieces. Slice green onion.
2. Heat dashi soup. Add soya-bean sauce, salt, and mirin. Let it boil.
3. Add chicken and green onion. Cook for 5 minutes. Remove bubbles.
4. Add udon and cook for 3 minutes.
5. Add green vegetables and cook for 2 minutes.
6. Add beaten eggs like drawing strings. Leave eggs to be cooked.
7. Serve with chili peppers.
