Stewed Pork

This is a very popular dish in Japan. We usually use boneless ribs but pork ribs with bones also OK. Please remove fats as much as possible and add boiled eggs to make “ajitsuke tamago”, tasty eggs.

Ingredients
Boneless pork ribs  1㎏
Ginger       10g
Dashi soup     400㏄
Sake        150㏄
Sugar        45㏄
Mirin        70㏄
Soya-bean sauce  120㏄
Boiled egg     5pcs
Water       plenty

How to cook
1. Cut boneless pork ribs into about 5cm cubes. Slice ginger. Remove eggshells.
2. Heat a pan and grill all sides of the pork. Pork does not have to be cooked.
3. Boil plenty of water. Add pork and ginger. Cook for 1 hour. Remove bubbles. Drain.
4. In a pan, heat dashi soup, sake, sugar, mirin, and soya-bean sauce. Put pork and ginger back in the pan. Cover the pan with kitchen paper like Bounty and cook for 1 hour. Add boiled eggs and cook for 15 minutes. Leave eggs in the soup.

Cut pork into 5cm cubes. Grill all sides.
Boil plenty of water. Cook pork and ginger for 1 hour. Remove bubbles.
Heat dashi soup, sake, sugar, mirin, and soya-bean sauce in a pan. Put pork and ginger back in the pan.
Cover the pan with kitchen paper like Bounty and cook for 1 hour.
Add boiled eggs and cook for 15mins. Leave eggs in the soup.
