Salty Malted Rice with Chicken

Marinate chicken with “shio koji”, salty malted rice. “Shio koji” is sold at supermarkets. “Shio koji” is malted rice with salt and water. It contains plenty of enzymes. It works to soften meat and add flavor.

Ingredients
Chicken thigh  500g
Shio koji    50g

How to cook
1. Cut chicken into small pieces, or use as a fillet.
2. Marinate chicken with “shio koji”. Store in a fridge for 2days.
3. Spread some oil in a pan. Heat at a low flame. Place chicken. Cook both sides with the cover.

Any “shio koji” is ok.
Cut chicken and marinate with shio-koji. Store in a fridge for 2 days.
Spread oil in a pan. Heat at low. Place chicken.
Cover the pan.
Cook both sides.
