This is a very popular and traditional dish in Japan and called “imo no nikorogashi”. “Imo” means potato and potato used in this dish should be taro called “satoimo”.
Ingredients
Taro potato 300g
Dashi soup 200g
Sugar 20㏄
Mirin 15㏄
Soya-bean sauce 20㏄
Cooking oil 15㏄
How to cook
1. Wash taro potato and remove the skin. Cut into about 4cm cubes if the potato was big.
2. Heat oil in a pan. Cook taro potato for 5 minutes.
3. Add dashi soup and let it boils. Add sugar and mirin. Cover the pan with kitchen paper like Bounty and cook for 6 minutes.
4. Add soya-bean sauce. Keep the pan covered. Cook until the soup become 1/3 in quantity.
5. Remove cover and shake the pan until all the liquid is gone.
