This is Korean cuisine. Korean cuisine often uses garlic but Japanese cuisine uses it only rarely. We use garlic usually when the dish originates other than Japan. This dish is marinated eggplant and this style of dish is called “namul” in Korean. There are many types of namul and the recipe is quite similar but different in treating vegetables.
Ingredients
Eggplant 250g
Soya-bean sauce 10㏄
Sesame oil 5㏄
Garlic (grated) some
Sesame (ground) 5㏄
Salt 10㏄
How to cook
1. Wash eggplant and cut off tips.
2. Cook eggplant in boiling water with salt for about 10 minutes.
3. Mix sesame oil, soya-bean sauce, garlic, and sesame well in a bowl.
4. Cut eggplant vertically in half, and then slice with 1cm thickness.
5. Marinate eggplant with the mixture.
