Marinated Pork (“Kasu-Zuke”)

“Kasu-zuke” is a kind of recipe that marinate meat or fish with a mixture of “sake-kasu” and miso. “Sake-kasu” is a side product of manufacture of sake. It is made from rice and malted rice. It contains a lot of enzymes so that marinated meat gets softened. Sake-kasu has different flavor by brewery, however, you can use any sake-kasu sold at supermarkets. Meat used in recipe is pork but you can cook with beef or chicken as well.

Ingredients
Sliced pork     400g
Sake-kasu     50g
Sake        15㏄
Miso        50g
Soya-bean sauce  15㏄

How to cook
1. Mix sake-kasu, sake, miso, and soya-bean sauce. Soak sake-kasu in sake and soya-bean sauce for a while to soften it.
2. Marinate pork. Store in a fridge for 2 days.
3. Wash with dashi soup or sake.
4. Heat oil in a pan. Cook both sides of the pork at low flame. Cover the pan while cooking.

Mix sake-kasu, miso, sake, and soya-bean sauce.
Marinate pork with the mixture.
Store in a fridge for 2days.
Wash meat with dashi soup or sake.
Heat oil in a pan. Cook both sides with low flame. Cover the pan while cooking.
