This dish is Yamanashi prefecture’s specialty, cooked chicken liver and sand liver, sweet and salty. You can cook this dish either sand liver or liver only. I used sand liver only. Please serve with lettuce. It is good to eat with lettuce or salad leaves. You can also eat with chili peppers.
Ingredients
Sand liver 200g
Liver 200g
Ginger 10g
Sesame oil 15㏄
Sake 30㏄
Sugar 25㏄
Soya-bean sauce 30㏄
How to cook
1. Remove white membranes from sand liver. Cut liver into small pieces and soak in water. Chop ginger.
2. Heat sesame oil in a pan. Cook ginger.
3. Add sand liver and liver.
4. Add sake and sugar when livers are cooked. Cook for 5 minutes.
5. Add soya-bean sauce. Cook until all the liquid is gone.
