“Nitsuke” of Fish (Sweet & Salty)

“Nitsuke” is a style of cooking and is a traditional Japanese dish. Same recipe is used for any fish with white meat. Fish can be sliced, whole, or head part like this recipe.

Ingredients
Fish       800g-1kg
Water      200㏄
Sake       200㏄
Mirin       100㏄
Sugar       50㏄
Soya-bean sauce  60㏄

How to cook
1. Remove scales and blood from the fish.
2. Pour 80C of hot water to the fish. Wash with cold water and remove all the remained scales. Wipe with kitchen paper.
3. Heat water, sake, mirin, and sugar in a pan. Let it boil.
4. Place fish skin top. Pour boiling soup to the fish. Cover with kitchen paper like Bounty. Cook for 5 minutes at middle heat.
5. Add soya-bean sauce and cook for 15 minutes.
6. Take out fish. Boil the soup to make a sauce. Pour this sauce on the fish.

Remove scales. Pour 80C of water. Wash with cold water. Remove all the remained scales.
Heat water, sake, mirin, and sugar in a pan. Place fish, skin top.
Cover with kitchen paper like Bounty. Cook for 5 mins.
Add soya-bean sauce and cook for 15mins.
Cover the pan as well.
Take out fish. Boil the soup to make a sauce.
