This is a traditional Japanese cuisine. We call this dish “saba no miso ni”. Mackerels are very common fish in Japan and we often cook with miso sauce. This recipe makes you busy while cooking but in this way, the fish become soft. You can use any miso but should be brown and not the white one.
Ingredients
Mackerel 4 slices
Dashi soup 120㏄
Sake 120㏄
Sugar 45㏄
Ginger 5g
Soya-bean sauce 10㏄
Miso 80g
How to cook
1. Prepare dashi soup. Slice ginger. Prepare miso sauce by mixing soya-bean sauce, miso, and 10cc of dashi soup.
2. Put mackerel in a bowl. Pour 80C of hot water. Drain as soon as the fish become white. Wash with cold water and remove any blood.
3. Wipe the fish to remove any water.
4. Heat the rest of the dashi soup, sake, sugar, and ginger in a pan.
5. When the dashi soup is boiled, add the fish. The skin top. Cook for 2 minutes at the middle heat. Keep pouring the soup onto the fish while cooking.
6. Add miso sauce into the pan and dissolve well. Cook for another 6 minutes. Keep pouring the soup onto the fish while cooking.
