Pilaf – Baby Scallops

This is a pilaf using baby scallops. You can use shellfish like clam or mussels, or chicken wings instead of baby scallops. Cook rice using ordinary rice cooker or high pressure cooker.

Ingredients
Baby scallops   350g
Sake       50㏄
Water      380㏄
Onion      100g
Carrot      100g
Sausage     100g
Butter      10g
Salt        2g
Black pepper 
Rice       320g
Olive oil      15㏄
Saffron      some

How to cook
1. Wash baby scallops. Heat scallops with water and sake in a pan. Cover the pan and stop heating when scallops are cooked. Separate the soup and scallops. Remove scallops from its shells. Add some saffron in the soup.
2. Cut onion and carrot into about 5-7mm cubes. Slice sausages. Wash rice and drain.
3. Heat olive oil and butter in a pan. Cook onions and carrots. Add rice and cook until the rice become transparent.
4. If you use an electric rice cooker, put cooked vegetables and rice in the cooker. If you use high pressure cooker, use this pan to cook vegetables and rice. Add 380cc of the soup, salt, and some pepper. Place sausages and scallops. Cook rice as usual.
5. Mix the rice as soon as cooked. Cover the cooker for a while before serve.

Wash baby scallops. Put in a pan with water and sake. Cover the pan and heat until all the scallops are cooked.
Separate the soup and the scallops. Add saffron to the soup. Remove shells of the scallops.

Heat olive oil and butter in a pan. Cook vegetables. Add rice and cook until the rice become transparent.
Cook rice with 380cc of the soup, sausages, and scallops.
