This biscuit is made from rice powder instead of wheat flour. Like chocolate biscuit, it is very soft and tastes like shortbread. The dough should be stored in a fridge for over an hour. You can freeze them at this stage so that you can bake biscuits anytime you want.
Ingredients
Butter 75g
Powder sugar 50g
Rice powder 125g
Egg yolk 1pc
Vanilla essence, oil, or beans
How to cook
1. Leave butter at a room temperature to soften. Sift powder sugar.
2. Whisk butter to make it cream-like. Add powder sugar and mix well.
3. Add egg yolk and vanilla.
4. Add rice powder. Mix well until all the powder is gone.
5. Spread food wrap and place the dough. Form a stick-like using the food wrap. Store in a fridge for over an hour.
6. Slice at 7mm thickness.
7. Bake for 15 minutes at 180C oven.
