“Ama-zake” is a sweet drink, served hot. We often drink this ama-zake in winter. This is made from “sake-kasu”, a residue of sake. Sake is made from rice and malted rice. Therefore, sake-kasu is a mixture of rice and malted rice. It contains alcohol as it is fermented to make sake.
Sake-kasu warms your body and encourage blood circulation. It contains a lot of dietary fiber and enzymes. Sake-kasu is sold at supermarkets and also at sake breweries. The flavor varies by sake breweries.
Ingredients
Sake-kasu 50g
Water 200-250g
Sugar 20-25g
Ginger 5g
How to cook
1. Soak sake-kasu in water for 1 hour.
2. Heat the mixture of water and sake-kasu. Dissolve sake-kasu well.
3. Add sugar when all the sake-kasu is dissolved. Don’t boil if you obtain the effect of enzymes. If you want to make them non-alcohol, boil for 5 minutes.
4. Ground ginger and take out juice of it.
5. Add ginger juice in the ama-zake.
