Grilled Fish – Miso Taste

Fish grilled after marinated with seasoned miso called “Saikyo- yaki”. Fish like salmon, mackerels, or cod are suitable. White miso should be used. White miso and ordinary brown miso taste different that the white miso is sweet. White miso is often called “saikyo-miso”.

Ingredients
Fish fillet   5 slices
White miso  300g
Sake     50㏄
Sugar    20g
Salt

How to cook
1. Cut fish fillet to your preferences. Sprinkle salt and leave for 1hour.
2. Mix white miso, sake, and sugar in a bowl. Make a miso paste.
3. Wipe any water comes out from the fish. Marinate them with the miso paste.
4. Store in a fridge for 2 days.
5. Wash fish with sake or dashi soup.
6. Grill in an oven at 250C for 15 minutes. If you use a pan to grill, grill both sides and cover the pan.

Sprinkle salt and leave for 1 hour.
Mix white miso, sake, and sugar in a bowl.
Wipe water came out from the fish. Marinate with miso paste. Store in a fridge for 2 days,
Grill in an oven at 250C for 15 mins.
