Kanpyo is a strip of dried gourd. They are sold dried and strips are very long. Kanpyo is usually cooked with soya-bean sauce and sugar. Cooked kanpyo is often used for sushi related dishes.
Ingredients
Kanpyo 20g
Salt 5g
Dashi soup 300㏄
Sugar 30㏄
Soya-bean sauce 22㏄
How to cook
1. Scrub kanpyo with salt. Wash thoroughly with water.
2. Boil kanpyo for 5 minutes. Drain.
3. Cut kanpyo to 3-5cm length.
4. Cook kanpyo with dashi soup and sugar in a pan for 10 minutes at low heat.
5. Add soya-bean sauce and cook until most of the soup is gone.
6. Store in a fridge with the soup.
