This is a kind of sushi: rice for sushi in a cooked “abura age”, deep-fried tofu. We call this type of sushi “inari zushi”. You can make an arrangement with rice like adding cooked carrot, lotus roots, shiitake mushrooms, or kanpyo. I introduce the basic, simple recipe.
Ingredients
Abura age 6pcs
Rice for sushi
Dashi soup 300㏄
Sugar 25g
Soya-bean sauce 25㏄
Sesame 15㏄
How to cook
1. Cut abura-age into half. Spread it like a bag.
2. Boil abura-age in hot water for 1 minute. Drain. Boil abura-age again. Repeat 3 times.
3. Place well-drained abura-age in a pan. Add sugar and dashi soup. Let them boil. Cook for 10 minutes with low heat. Place a heavy plate or cover to make abura-age stay at the bottom of the pan.
4. Add soya-bean sauce. Cook until most of (not all) the soup is gone.
5. Prepare rice for sushi. Add sesame.
6. Put rice into the abura-age. Wet hands with soup of abura-age to avoid rice sticking to your hands.
