Marinated Fried Fish

This is a traditional Japanese cuisine. Fried fish is marinated with small onions, green onions, and ginger. Fish can be sardines, mackerels, or horse mackerels. Fish with blue-back are suitable.

Ingredients
Blue-backed fish
Rice powder
Green onion    1pc
Small onion    5pcs
Ginger       20g
Lemon      1/4pcs
<Dressings>
Dashi soup    400㏄
Sugar      30g
Mirin       25㏄
Soya-bean sauce 95㏄
Vinegar     100㏄


How to cook
1. Remove bones of fish. Small bones can be remained. Hard scales should be removed. Cut to about 7-10cm. Cover with rice powder.
2. Cut green onion with 3cm length. Slice ginger. Slice small onions with 5mm thickness. Remove seeds of lemon and slice them.
3. Boil dashi soup, sugar, mirin, and soya-bean sauce in a different pan. Add vinegar and lemon. Wait to boil and stop heating.
4. Spread oil and cook green onions, ginger, and small onions in a pan. Put them in a pan of dressings.
5. Fry fish with 180C of oil. Put them into the dressings as soon as they are fried.
6. Leave them marinated for 30 minutes.

Remove bones and hard scales.
Cut to 7-10cm. Cover with rice powder.
Cook green onions, small onions, and ginger. Add to the dressings.
Boil dashi, soya-bean sauce, mirin, and sugar. Add vinegar and lemon. Fry fish and add to the dressings.
Leave for 30 mins.
