Noodles used in this fried noodle is made from sweet potato’s starch. It is similar to vermicelli but thicker and has dark color. Korean vermicelli is called “tanmyon”. Seasonings are very simple: soya-bean sauce and sugar.
Ingredients
Beef 200g
<Beef seasoning>
Soya-bean sauce 15㏄
Sugar 15㏄
Green onion 15㏄ (chopped)
Sesame oil 8㏄
Garlic 1g
Burdock (gobo) 300g
<Burdock seasoning>
Soya-bean sauce 60㏄
Sugar 30㏄
Sake 15㏄
Mirin 15㏄
Sesame oil 10㏄
Water 100㏄
Korean vermicelli 300g
Colored pepper 1pc
Wood ear mushroom 4pcs
Onion 100g
How to cook
1. Cut beef into strings. Marinate with seasonings.
2. Cut burdock into thin sticks. Soak in a water with some vinegar. Boil for 5 minutes from cold water and some vinegar. Drain. Cook with seasonings in a pan until all the liquids are gone.
3. Slice colored pepper, onion, and wood ear mushrooms.
4. Boil Korean vermicelli in hot water with some sesame oil and soya-bean sauce. Follow instruction written on the package for the boiling time. Drain and cut with scissors.
5. Heat sesame oil in a pan. Cook onions and colored peppers. Salt and pepper. Add beef and wood ear mushrooms.
6. After beef is cooked, add burdock. Add Korean vermicelli. Taste. Add sugar and soya-bean sauce as needed.
