This is a very popular daily dish, called “nira-tama”. This recipe is a kind of “tamago-toji”, cooked with eggs. There are many “tamago-toji” recipes and this is one of these. Please find Chinese chives (nira) at supermarkets or Chinese food stores.
Ingredients
Dashi soup 200㏄
Eggs 2pcs
Chinese chives 100-150g
Soya-bean sauce 8㏄
Sugar 10㏄
How to cook
1. Wash Chinese chives. Cut into about 5cm length. Beat eggs.
2. Boil dashi soup in a pan and add soya-bean sauce and sugar.
3. Add Chinese chives and cover the pan. Cook for 3-5 minutes.
4. Add eggs and mix with Chinese chives. Cover the pan and cook until eggs are done.

Wash Chinese chives and cut into 5cm length.
