Poire of White Fish

Various fish and seafood are sold at supermarkets in Japan and there are many recipes using those. Slices of fish are very common and I introduce a very simple recipe. As it is called “poire”, the recipe is of French origin. I use rice powder instead of wheat flour so that the dish has become gluten-free. You can use any white fish or salmon.

Ingredients
Slices of white fish
Salt
Pepper
Rice powder
Olive oil
Sake or white wine

How to cook
1. Remove all the bones and scales. Cut as you like.
2. Salt and pepper all over the fillet. Cover with rice powder using tea strainer.
3. Olive oil in a pan. Cook meat first.
4. Turn to skin side after meat side gets crispy. Pour about 15cc of sake or white wine and cover the pan. Cook for 2-3 minutes until skin gets crispy. Don’t cook too long. It takes only 2-3 minutes each side.

Cover fillets with rice powder.
Olive oil in a pan. Cook meat first.
Turn around after meat side become crispy.
Pour 15cc of sake or white wine and cover the pan. Cook for 2-3 mins until skin gets crispy.
