Potato Salad – Taiwanese Style

This is a kind of salad of thinly sliced potato, green peppers (paprika), and ham. You can use slicer to make potato very thin sticks. Peppers should be sweet ones and not spicy hot red peppers. They can be any color. I always use two colors.

Ingredients
Potato      500g
Peppers (paprika) 2 colors x 1/2 each
Ham       5 slices
Salt       5g
Sugar      6g
Vinegar     8㏄
Sesame oil    3㏄

How to cook
1. Slice potato and then make them thin sticks. Soak in a water with some vinegar (about 2cc).
2. Slice peppers and soak in a water with some vinegar. You can add to potato but only a few minutes. Don’t soak together for a long time.
3. Wash peppers and potato well.
4. Boil water. Add drained potato and peppers and boil for 30 seconds. Drain well.
5. Mix salt, sugar, vinegar, and sesame oil in a bowl. Add potato, peppers, and ham. Mix well. Leave 30 minutes.

Slice potato, peppers, and ham into thin sticks.
Soak potato and peppers in a water with some vinegar.
Boil potato and peppers for 30 sec. Drain well.
Mix salt, sugar, vinegar, and sesame oil. Add potato, peppers, and ham. Mix well and leave for 30 mins.
