This dish is originally a Chinese cuisine but has been arranged to a Japanese style. This is called “mabo dofu” and a very popular dish that there are many recipes exist, and different by each restaurants and homes.
Minced meat can be pork or beef. It’s better to have Chinese soup stock but if you couldn’t find one, cook without it, and add some salt.
Ingredients
Tofu 600g
Minced meat 300g
Green onions 5㎝
Ginger 10g
Tobanjyan 5㏄ (Chinese chili sauce. Skip if you didn’t have one)
Chinese sake 30㏄ (Japanese sake is fine)
Miso 15g
Soya-bean sauce 15㏄
Sugar 8g
Chinese soup stock (granule) 5g (dissolve in 100ml water)
Starch 1 Tbsp. (dissolve in 45ml water)
How to cook
1. Cut tofu into 2cm cubes. Boil for 30 seconds and drain.
2. Chop green onions and ginger. Cook in a pan with excess oil. Add minced meat and cook.
3. Add Tobanjyan and cook. Add Chinese sake, miso, soya-bean sauce, sugar, and Chinese soup stock and let them boil.
4. Add tofu and cook for 5 minutes. Stir gently.
5. Add dissolved starch and cook until the food gets thickened.
