Yogurt dessert made from drained yogurt, the residue of taking whey. Usually, chocolate mousse needs creams, but substituted with drained yogurt. Less calorie, and healthier.
Ingredients
Drained yogurt 200g
Natural syrup 35g
Gelatin 5g
Milk 100㏄
Dark chocolate 100g
Egg 1pc
Preparation
Separate egg yolk and egg white. Whip egg white to a firm meringue.
Soak gelatin with water. Drain, and then melt over hot water.
Melt chocolate over hot water.
How to cook
1. In a small bowl, beat egg yolk. Boil milk. Add milk to the bowl, mix with egg yolk well. Put this mixture in a pan and heat. Mix continuously. Stop heating at 80C.
2. Add 1/4 of milk and egg yolk mixture into melted chocolate 4 times. Each time, mix with spatula very well. Chocolates’ texture changes each time. The chocolates become smooth by the end of mixing.
3. In a separate bowl, add drained yogurt and syrup. Mix well.
4. Mix chocolates and yogurt. Add melted gelatin.
5. Add meringue and mix.
6. Pour into container and cool for 4 hours.
