Squids are very common food and there are many types of recipes. This is very traditional Japanese cooking “terini”, sweet with soya-bean sauce flavor. There also many types of squid and I used small squid this time. However, you can use any types. Before cooking, make sure all the suction cups, bone, and mouth are removed. If squids were big, you may need to cut arms but if squids were small, you can cook as they are.
Ingredients
Squids
Sake 45㏄
Mirin 30㏄ (or 25cc of sake and 5g of sugar)
Sugar 15g
Soya-bean sauce 38㏄
How to cook
1. Clean squids and cut into pieces.
2. Heat sake, mirin, sugar, and soya-bean sauce in a pan.
3. Add squid when boiled. Mix 2-3 times, and drain.
4. Put sauce back to the pan and boil again. Add squid and drain. Repeat 3 times.
5. Put sauce back to the pan and boil to make the sauce 1/2 quantity.
6. Put squid in a pan and mix with sauce. Stop heating. Don’t over cook. Do 3 and 4 quickly.
