This is a very popular dish served at home as well as at “Teishoku-ya”. Teishoku-ya is a restaurant where you can have various set menu of main dish with rice, miso-soup, and small dishes. You need to use sliced pork and best with thickness at 3 mm, but could be thinner or thicker.
Ingredients
Pork 350g
Soya-bean sauce 30㏄
Sake 15㏄ (should be Japanese sake)
Mirin (sweet Japanese wine) 15㏄ (or 12cc of sake + 3g of sugar)
Ginger 10g
How to cook
1. Grate ginger. Mix soya-bean sauce, sake, mirin, and ginger.
2. Soak sliced pork one by one.
3. Put in a plastic bag and keep in a fridge over 12 hours.
4. Oil on a pan and cook both sides. Upside down the pork as soon as the color started to change. Don’t overcook.
