Ginger Biscuit

This is a spicy biscuit, contains crystallized ginger. Spices and ginger makes you warm and good to have with tea or coffee, and also with red wines.

Ingredients
Crystallized ginger     2-3 Tsp
Butter          56g
Palm sugar        200g
Egg           1pc
Molasses         35g (if not available, use maple syrup)
Rice powder       290g
Baking soda       2 tsp
Salt           3/4 tsp
Clove ground       1/4 tsp
Ginger powder      1/4 tsp
Cinnamon powder     1 tsp
Plain sugar for coating   100g

Preparation
* Leave butter in a room for a while to make it soft.
* Sift rice powder, baking soda, salt, clove, ginger powder, and cinnamon together.
* Chop crystallized ginger into small pieces.

How to cook
1. Mix and cream butter and palm sugar. Add beaten egg and molasses to mix well. Add chopped crystallized ginger and mix.
2. Add 1/3 of pre sifted powders and mix well. Add 1/3 again and mix, and then the last 1/3, do the same.
3. Form balls with about 3-4cm diameter each. Roll the balls to cover with plain sugar. Place finished balls in a fridge for 2-3 hours.
4. Bake for 20 mins at 190C oven.

Chop crystallized ginger into small pieces
This is a palm sugar that I used.
Mix butter and palm sugar. Add egg and molasses, and mix well.
Add crystallized ginger. Add powders 1/3 each for 3 times. mix well.

                                                                        

Mixed well and ready to make balls.
Form 3-4 cm diameter balls and roll in a sugar to cover the balls.
Leave balls in a fridge for 2-3 hours. You can store to freeze and bake later.
Bake in an oven for 20 mins at 190C.
