Marinated Cucumber and Sea Weed

Marinated cucumber and sea weed is a common style of “sunomono”, marinated with vinegar. Taste is sour but sweet. I used sea weed called “wakame”, major sea weed in Japan and can be found at any supermarket. “Wakame” is most common topping of “miso” soup. It can be sold in dry or wet. If wakame was dry, soak in a water for 30 minutes before use. If it was wet, wash off all the salt and soak in a water for 30 minutes before use.

Ingredients
Cucumber     2pcs
“Wakame”     10g (dry) or 100g (wet)
<dressing>
Vinegar 66ml
Dashi (water) 1/4Tbs
Sugar  2TBS
Salt    1/2tbs
Soya-bean sauce 1tbs

How to cook
1. Slice cucumber and marinate with salt (1tbs). Leave for 20 mins. Squeeze to remove some water from cucumber.
2. Cut “wakame” into about 3cm length.
3. In the bowl, mix ingredients of dressing. Marinate cucumber and wakame.
