A cake made from sweet potato, sugar, and “kanten”. Kanten is Japanese agar, works like gelatin, made from sea weed. Use agar or gelatin if you could not find Kanten. You can use any container to make this cake. I used a bread tin but it can be anything.
Sweet potato contains plenty of fibers and vitamin C. It is good for constipation and anti-fatigue.
Ingredients (container size 8cmx21㎝)
Sweet potato 500g
Sugar 100g
Kanten (agar) 4g
Water 120g
How to cook
1. Cut sweet potato with skins on. Steam or boil until potato softens. Peel skins and mash them when they are still hot. If you want smooth taste, strain them. I used a mashing stick and left some grains.
2. Put water in a sauce pan and add “kanten”. Leave them boil for 1 minute. Add sugar and dissolve well using a spatula.
3. Add mashed potato and mix well at low heat.
4. Put in a container and remove air. Let it cool.
